Head Chef - Restaurant Manager Company Description To ensure the operational management and control of a collective restaurant in a school environment located in the Riviera vaudoise region, our client has mandated us to recruit their future Head Chef - Restaurant Manager (M/F) CDI - 80 to 90% Job Description As Head Chef and Restaurant Manager, you will be responsible for the smooth operation of the kitchen, both operationally and managerially, with the mission of offering high-quality culinary services adapted to your clientele. At the head of your team, you will participate in the production of more than 220 meals per day, while coordinating deliveries in hot and cold liaison with partner institutions for a volume of around 160 additional meals daily. As a true manager of your unit, you will be responsible for organizing teams, planning activities, managing purchases, stocks, costs, and budget. You will also ensure the development of a balanced, attractive, and seasonal restaurant offer, while guaranteeing respect for hygiene, food safety, and quality standards. Finally, you will maintain trust relationships with various internal partners and actively contribute to the smooth operation of the establishment. Profile Sought With a recognized culinary training, you have a solid background that has allowed you to assume, for at least five years, the function of Head Chef in a high-volume production restaurant environment. Confirmed experience in collective catering is essential. Curious and creative, you master current culinary techniques and are able to offer international, balanced, and attractive cuisine that can satisfy both adolescents and the teaching staff and management. You perfectly master the constraints related to collective catering, including the organization of services in hot and cold liaison, as well as HACCP standards and regulatory requirements in force. Rigorous and organized manager, you are recognized for your management skills, your ability to optimize resources, and your sense of responsibility. With excellent interpersonal skills and federative leadership, you know how to support your teams on a daily basis while developing professional relationships of quality with your various interlocutors.
