FILLETIER / FILLETIERE Gastromer, based in Plan-les-Ouates (Genève), is a reference company specialized in the selection and distribution of fresh fish and seafood. Concerned with offering irreproachable quality and excellent service to our restaurateur and professional clients, we rely on the unique expertise of our teams. To strengthen our production workshop, we are looking for a: Filletier / Filletiere (M/F) Your mission: At the heart of our production link, you are the guarantor of the valorization of our seafood products. You work with precision to meet the high demands of our clientele. Your main responsibilities: Production and cutting: Fillet, gut and portion all types of sea and freshwater fish. Yield and excellence: Ensure the quality of the cut both in its aesthetic presentation and optimal yield. Quality and sanitary safety: Identify and immediately inform your superior in case of presence of parasites in the fish. You have the duty and responsibility to interrupt production in case of non-conformity of the goods and to prevent the competent authority. Strict hygiene: Rigorously respect the hygiene procedures in force (wearing gloves, aprons, maintenance of knives, etc.), maintain the cleanliness of your workstation and execute the cleaning at the end of production according to the established plan. Your profile: Technical skills: Perfect mastery of the knife, in-depth knowledge of the different species of fish and their morphologies. Experience: Confirmed and successful experience in a similar filleting position (tide, wholesaler, or large distribution). Personal skills: You are rigorous, autonomous and able to work effectively under the pressure of production flows.
